Distilled at Bunnahabhain, this heavily peated 9 year old single malt is the latest addition to an on-going series of wine cask-finished whiskies from Signatory Vintage, as part of their approachable Un-Chillfiltered Collection which explores whiskies that are neither chill-filtrated nor have added colouring.
Bunnahabhain is an anomaly amongst Islay distilleries, producing more unpeated whisky than peated. All of it is excellent though and while traditionally being in great demand with blenders, is increasingly sought after by independent bottlers.
"Staoisha" is a term commonly used by independent bottlers to refer to the relatively rarer heavily peated version of Bunnahabhain whisky, which exhibits a strong, intensely smoky flavour profile, with notes of peat, smoke, and maritime or medicinal undertones. The term is derived from the picturesque lake, Loch Staoisha, nestled nearby the distillery in the heart of the island’s peat bogs and often used as an alternative water source.
Perfectly combining the power of Islay peat with the finesse of 1st Fill Pinot Noir Butts after a lengthy secondary maturation of 28 months, this heavily peated Bunnahabhain tantalises with thick wafts of smoke, salty seaweed, and aromas of red fruits, black cherries, fresh herbs, spices and liquorice.
A vatting of 2 Pinot Noir Butts, this release had an outturn of 1880 bottles when it was bottled in 2023.
